Cool High-Altitude Vineyards: Grown in the highest and coolest high-altitude vineyard plots along the Mediterranean coast, allowing the delicate Pinot Noir grapes to ripen evenly while retaining crisp natural acidity
Varied Mediterranean Terroir: Cultivated in highly diverse soils composed of hard limestone, schist, and gravel transported by the rivers of the Languedoc region.
Gentle Extraction: Grapes are harvested at optimal maturity in late September, fully destemmed, and subjected to a careful 10 to 15-day maceration with gentle pumping over to extract soft tannins and pure fruit aromatics.
Meticulous Dual-Aging: Partially matured for several months in 225-litre oak barrels to build aromatic complexity and structural roundness while preserving its vibrant, youthful fruit identity.
