Single-Vineyard Terroir: Sourced entirely from a single, 2.5-hectare organic plot situated at a high altitude of 650 metres. The vines thrive in calcareous, clay-loam soils rich in organic matter and are surrounded by natural forest.
Artisanal Harvest & Yields: The grapes are meticulously hand-harvested with strict parcel selection, keeping production extremely low (about 1.4 kg of grapes per vine) to maximize juice concentration.
Extended Élevage: The winemaking process involves a 5-day cold pre-fermentative maceration, followed by 30 days of post-fermentation maceration. The liquid is then aged for 15 to 22 months in second- to fourth-fill French oak barrels, followed by up to 3 additional years of refinement in the bottle before release.
Tasting Profile
Nose: Expressive and complex. It releases aromas of ripe cherries, blackberries, and stewed fruit compote, balanced by fresh Mediterranean scrub herbs like mint, thyme, and rosemary, alongside a dusting of white pepper, clove, and sweet licorice.
Palate: Highly concentrated, meaty, and broad with a velvety mouthfeel. It harmoniously blends sweet, deeply polished tannins with balanced acidity, revealing mid-palate notes of cocoa, toffee, and earthy minerality.
